Broad bean and goat’s cheese dip

The broad bean and goat’s cheese dip is excellent to season vegetables or spread on toasted bread.

Ingredients for the broad bean and goat’s cheese dip

500 g of broad beans
100 g of fresh goat’s cheese
1 lemon
extra virgin olive oil
salt and pepper

Preparation

Remove the broad beans from the pod. Parboil them for a couple of minutes in warm water. Put the broad beans in a bowl with ice-cold water and peel them. Grate the peel of half a lemon and leave aside a few drops of lemon juice.

Using a mixer, blend the broad beans with goat’s cheese, a spoonful of extra virgin olive oil, the lemon peel and juice.
Season with salt and pepper and serve.
