Ingredients for baked radicchio with caramelised onions
4 heads of radicchio
1 red onion
2 spoonful of sugar
3 spoonful of extra virgin olive oil
salt, pepper, chili pepper
Cut the bunches of radicchio into halves. Clean, wash and dry them. Cut the onion into wedges.
Preheat the oven at 190°C. Cover a baking tray with greaseproof paper. Sprinkle with sugar. Season with salt, pepper, chili pepper and oil. Bake for about 20 minutes, until the vegetables are cooked and the sugar is melted.
Serve warm or at room temperature.
