Watermelon Caprese salad

Coloured, original, easy to prepare, and cheap. The watermelon Caprese salad is a fresh and delicious dish, perfect for summer.

Ingredients for 4 people

4 slices of watermelon

1 cup of aromatic vinegar

4 spoonful brown sugar

260 g of fresh mozzarella cheese

extra virgin olive oil

fresh basil or mint

whole marine salt

black ground pepper

Preparation

Boil the aromatic vinegar and the brown sugar in a small pot over medium heat until obtaining dense syrup (similar to liquid honey compactness), paying attention not to burn it. Cut the watermelon in little ball-shaped pieces. Cut the mozzarella cheese in slices. Place the slices of mozzarella and watermelon in the dishes and season with the oil and the aromatic vinegar reduction. Season with salt and pepper and garnish with some leaves of basil (or mint).
