Cold watermelon and tomato soup

Cold watermelon and tomatoes soup is refreshing summer meal, very easy to prepare.

Ingredients 

300 g of cold watermelon

100 g of tomatoes

2 mint leaves

salt and pepper

extra virgin olive oil

Preparation

Keep the watermelon in the fridge for a night before preparing the soup.
Peel the watermelon, cut it to pieces and remove the seeds. Wash fresh tomatoes. Put the pieces of watermelon, tomatoes and mint leaves in a mixer.
Pour the cold watermelon and tomato into some small cup and put them in the fridge for some hours. Season with salt, pepper and extra virgin olive oil before serving and garnish with some fresh mint leaves.
