Courgette pesto

Courgettes pesto is a light and fresh seasoning, enriched with some mint leaves and sunflower or pumpkin seeds.

Ingredients for two persons

1 courgette (about 100 g)

20 g of grated parmesan cheese

20 g of sunflower or pumpkin seeds

leaves of mint

salt

3 tablespoons of extra virgin olive oil

Grate the courgette roughly and drain it until it loses its liquid.
Whip or crush in a mortar courgette and mint.
Add sunflower or pumpkin seeds first, then add parmesan cheese, salt and extra virgin olive oil.
Season pasta with the courgettes pesto and serve it.
