Courgette Muffins

You can also use courgettes to prepare the muffins and enjoy a tasty breakfast.

Ingredients for 6 muffins

150 g of whole millet flour

a pinch of salt

1/4 teaspoon of baking soda

2/3 teaspoon of baking powder

2 teaspoons of cinnamon

2 tablespoons of brown sugar

2 eggs

1 tablespoon of olive oil

100 g of courgettes

Wash and grate courgettes. Drain the liquid out of them. Add the other dry ingredients: flour, salt, baking soda, baking powder, cinnamon and sugar and stir them together until you get a homogeneous mixture. Whip eggs apart with olive oil. Add them to the other dry ingredients and finally add courgettes. Cook the courgettes muffins in a preheated oven at 180°C, for about 40 minutes.
