Ingredients for two servings for the courgette and melon salad
1 yogurt pot
half lemon, lemon skin and lemon juice
salt and pepper
extra virgin olive oil
To prepare the sauce, mix together yougurt, lemon skin and lemon juice, salt, pepper and a tablespoon of extra virgin olive oil.
Let the sauce rest in the fridge for about 20 minutes.
Wash and clean the courgette. Wash the melon and remove its seeds.
Use a peeler to cut the courgette and the melon.
Season with the yougurt sauce and serve the courgette and melon salad cold as starter.
