Even in the winter, a good home-made fruit juice can be a panacea. It provides useful vitamins for the prevention of seasonal ailments and helps replacing the mineral salts lost through sweat in summer months. In order for our juices to keep unchanged their beneficial properties, it is important to know which appliance is the most suitable for our purpose. Actually, heat and oxidation caused by the high-speed spinning of some appliances can reduce or alter the nutrient content of fruits and vegetables.

Traditional centrifugal juicers

A centrifugal juicer works by cutting up fruits and vegetables with a sharp blade spinning at a very high speed that separates the juice from the pulp. The centrifugal force pushes the juice in a narrow strainer that filters out fibres. To do this, a high-powered juicer with a high number of rotations per minute is necessary because only this can generate heat and allow air to be trapped into the juice, thus altering the content of nutrients of the juice. Vitamins and enzymes, indeed, are easily destroyed with heat, and the appliances that use a centrifugal mechanism generate excessive amounts of friction heat. Generally, in the pulp some juice is still embedded. In many models, the fibre left in the strainer should be removed frequently during the use; final cleaning is laborious.

Cold press juicers

These appliances don’t produce as much heat and they extract juice from fruits and vegetables, and even from dried fruits, such as almonds and hazelnuts, slowly. Therefore, vegetable milks, juices, cocktails, fresh soups and particular condiments.
